Once again, our boss goes on another holiday.
And so once again, I'm put on Spring Roll duty everyday until she comes back, which lessens my free time by around 2 hours.
Spring Rolls requires so much pro skill to make, unlike Curry Puffs. Well, I've known how to make Curry Puffs for around 6 years now, but have only known how to make Spring Rolls for around 4 years or so. And I reckon Spring Rolls are much harder to make than Curry Puffs if you're intending to make them "good".... and naturally, I need to make them "good", seeing that we're a restaurant.
When I make Curry Puffs, I need not care about much and just do it casually. But with Spring Rolls, I need to get the filling exactly right, otherwise the sizes makes a surprisingly drastic change... and then I have to shape it right, otherwise the sizes also makes a drastic change... and stop rolling it right, otherwise the pastry will be too thin and break... and put the right amount of egg to glue the end on, otherwise it'll also break because it's too wet...
